Black Bean and Corn Relish

Some call this a salsa, others a relish. Either way it’s delicious as no doubt you’ve tasted one or even made one yourself. This recipe is just another option out there for basically something you can’t mess up- but in the event you’ve never come across a recipe to add to your collection, here’s a very good one.

I scarf this stuff up with a fork. It is also heavenly with tortilla chips, but we often like to eat it with grilled chicken or tilapia. There is no wrong way to enjoy this relish. I’ve also been known to put in on a bed of lettuce in place of dressing and eat it as a salad. I imagine it would be great on a baked potato or even in an omelet.

Black Bean and Corn Relish

1 can diced tomatoes with juice*

1 medium tomato, chopped

1 can black beans, drained and rinsed

1 &  1/2 cups frozen corn (or 1 can but frozen/fresh is better)

1 bunch fresh cilantro, chopped

1 small onion, diced fine

1 or 2 cloves garlic, diced

1 medium-sized jalapeno pepper, de-seeded and chopped (leave some seeds in for desired heat)

salt and pepper

Lime juice to taste (about 1/2 T)

Combine all ingredients together and taste to see if anything needs to be added (salt, pepper, garlic, etc.) Let chill/sit to flavors can blend.

*You can also use only fresh tomato or a combination of both like I did.

Tomatoes are versatile so try using yellow, grape, or cherry tomatoes as well.

Don’t let this recipe confine your imagination. Here is a short list of other great ingredients that would go wonderful int his dish:

Avocado, diced

Hominy

Green chiles (4 oz. can)

Chili powder

Cumin

Pinto, kidney, or garbanzo beans

Bell pepper (any color)
