Spinach-Artichoke French Bread Pizza
1 baguette, quartered (or whole wheat sandwich roll, ciabatta, etc.)
1 T butter
1 small onion, chopped
1 -2 garlic cloves, minced
salt & pepper
1 heaping T flour (whole wheat or unbleached)
3/4 cup milk
1 pinch nutmeg
1- 10 oz. box of frozen spinach, thawed and squeezed dry
1- 6 oz jar of artichoke hearts, marinated or not
1/4 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
Preheat oven to 400* and arrange bread on baking sheet.
In skillet over medium heat, melt butter and add garlic and onion; cook until softened. Season with salt and pepper.
Whisk in flour and then the milk. Whisk until combined. Add in Parmesan and stir well. Cook a few minutes, until thickened.
Pull spinach apart and add to mixture in skillet, combining well. Fold in artichokes and cook until heated through.
Place mixture on bread and top with mozzarella. Bake until cheese is melted, 10 to 12 minutes. Top with thyme.
