Surprise, surprise. Another meatball recipe? Can’t help it, peeps. I am drawn to the meatball for some weird reason. But this is not your ordinary meatball. This is a meatball sub, meatloaf-like, burger. Whatever your fix is- this sandwich will do it. Seriously. It’s good.
1 to 1 1/2 lb. ground turkey or chicken (or a mixture of both; veal too if that’s your thing)
2/3 cup Panko or other breadcrumbs
1 Tbsp. dried parsley
1/3 cup grated or shredded Parmesan cheese (Romano too. Both grated and shredded, too, if you want)
1 egg, slightly beaten
2 large garlic cloves, finely chopped
1/4 cup onion, finely chopped
Splash of milk
1 tsp. sage
1/2 tsp. nutmeg
1/2 tsp. dry mustard
Salt and Pepper
Sharp cheddar slices or provolone
4 Ciabatta rolls, split and lightly toasted
Garnish: mustard, mayo, ketchup, tomato slices, avocado, red onion, etc.
1. Mix together meat and all ingredients on list (except for EVOO and cheese slices). Form into 4 patties and drizzle liberally with EVOO.
2. Heat skillet over medium-high heat and place patties into hot pan. Cook for 10 minutes, turning once. Top each burger with cheese and tent with foil to melt.
3. Split and toast ciabatta, placing burger on each bottom half. Sprinkle with extra Parmesan and serve with garnishes.
