Yam Spice Muffins

Now for the yam spice muffin……. 😉

For a very simple muffin these are quite hearty. Serve with butter and a jam of your choice, and you don’t really need anything else to round out your breakfast {or snack}. Perfect for a meal on the go as well.

These muffins are a little dense and cross somewhere between muffin and biscuit. I have adapted the recipe from Rodale, but would suggest adapting it further by using 1/2 whole wheat flour and 1/2 unbleached white for a little lighter muffin.

Yam Spice Muffins

2 cups whole wheat flour (1/2 & 1/2) or whole wheat pastry flour

1/2 cup organic sugar, plus extra

1 Tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

1/4 tsp nutmeg

1  1/2 cup cooked sweet potato, mashed

1/2 cup water

spray oil for muffin tin

Preheat oven to 375*. Combine all the dry ingredients (flour, powder, soda, salt, cinnamon, and nutmeg). Add yams and water, mixing together well. Divide among 12 muffin cups and sprinkle additional sugar on top of each muffin. Bake for 25-30 minutes or until muffin springs back when lightly pressed.
