Four Bean Salad

Recently I went to a dinner at a friend’s house where everyone brought sides to go around the main course, and it was there I discovered this awesome bean salad. Now, I know some of you will say this is old news, but to me it’s not and I had to make one of my own and share. I love the flavors of the balsamic mixed with sugar. It’s not too sweet and not too bitter. Just perfect.

There are lots of things you could add into a salad like this, such as onion and bell pepper, but I just wanted to keep this simple so it’s strictly beans and dressing. And really, you could use any combination of beans you’d like.

Four Bean Salad

1 can kidney beans, drained and rinsed

1 can garbanzo beans, drained and rinsed

1 can green beans, drained and rinsed

1 can navy beans, drained and rinsed

3/4 cup sugar

1/2 cup balsamic vinegar

1/4 cup EVOO

1/2 tsp salt

Combine the beans in a large bowl. Whisk vinegar, sugar, oil, and salt until sugar dissolves.

Pour vinegar-sugar mixture over beans and toss well to coat.

Cover and refrigerate over night. Stir several times.

Cajun Chicken Fritters with Cajun Aioli

These fritters were super yummy, and the best part is with all these flavors you could easily swap the meat out for crab or shrimp or any other fish you like. The aioli definitely made this dish so don’t forget to whip up some and refrigerate for a bit while you’re making your fritters.

Cajun Chicken Fritters

3 or 4 chicken breasts, cooked and shredded

1 cup flour

1/2 cup cornmeal

1/2 tsp salt

1/2 tsp baking soda

4 eggs, separated

1 cup buttermilk

1 T butter, melted

1 tsp srirachi or other hot pepper sauce

1-2 tsp cajun seasoning

1 1/2 tsp liquid crab boil

2 garlic cloves, minced

1/2 cup chopped bell peppers (any colors)

Cooking oil

Cajun Aioli

1/2 cup mayonnaise

1 T grain mustard

1 tsp cajun seasoning

1. Whisk ingredients for aioli together and refrigerate. *This recipe can easily be doubled or tripled, depending on how much you like.

2. In a large mixing bowl combine flour, cornmeal, salt, and baking powder.

3. In another bowl combine buttermilk, butter, slightly beaten egg yolks, hot pepper sauce, cajun seasoning, and crab boil.

4. Stir to combine the buttermilk mixture into the flour mixture. Add in peppers, garlic, and shredded chicken.

5. Beat egg whites until stiff peaks form and then fold into the chicken mixture completely.

6. Heat cooking oil (about 1 inch) in a dutch oven or heavy skillet, and drop chicken mixture by spoonfuls into the oil, about 4 at a time so they have room to cook and don’t stick together. Flip and cook until golden brown. Drain on paper towel-lined plate.

7. Serve with cajun aioli and something creamy and crunchy like cole slaw.

Bacon Cheddar Potato Cakes

Use your leftover mashed potatoes to create a new side dish full of flavor and crunch. These are really good!

Bacon Cheddar Potato Cakes

2 cups leftover mashed potatoes

4 slices turkey bacon, cooked and crumbled

1/2 cup shredded cheddar cheese

1 egg

1 tsp onion powder

salt & pepper, to taste

EVOO

1. Combine all the ingredients and form 2 oz. patties.

2. Heat EVOO in skillet over medium-high heat and cook each potato cake for about 4 or 5 minutes on each side until golden brown. *Cook about 3 or 4 at a time so they don’t stick together and you can easily flip them.

3. Drain on paper towel.

Thai Dragon Noodles

These noodles are super yummy. You can adjust the heat as much or as little as you want. They went great with my Honey Sesame Chicken and gave me an awesome idea for a Pad Thai recipe (coming soon)! You can use lo mien noodles, or even regular linguine if you’d like, but for an authentic dish try these Thai rice noodles.

Thai Dragon Noodles

8 oz. Thai rice noodles

2 T butter

2 eggs

1/4 tsp red pepper

1 1/2 T brown sugar

3 T soy sauce

2 tsp sesame oil (optional)

1 T Sriracha (rooster sauce)

2 green onions, sliced (all of it)

2 T fresh cilantro, chopped

1. Cook noodles according to package directions. Drain and set aside.

2. In small bowl mix together soy sauce, the brown sugar, sriracha, and red pepper flakes. Set aside.

3. Heat skillet up with the butter and scramble the eggs with the chopped whites of the green onions. Reserve the scallions (green bits) for later.

4. Take eggs out of skillet and set aside. Put sesame oil into hot skillet and do a real quick pan fry of the noodles. Combine eggs and sriracha sauce into the skillet with the noodles.

5. Sprinkle top with scallions and cilantro before serving.

Southwest Chicken and Corn Chowder

You probably are thinking this would be a great recipe for the Fall and I agree, but the weather here has been cold and rainy for nearly a month, so it feels pretty Fall-like. Besides, comfort food is welcome in my house anytime of the year and I’d bet you’d agree if you try this lovely chowder. Just serve with some crusty bread and enjoy.

Southwest Chicken and Corn Chowder

1 T EVOO

3-4 boneless, skinless chicken breasts

2 green onions, chopped

1/2 cup carrots, sliced thin or diced

1/2 cup celery, sliced thin or chopped

1 small to medium potato, peeled and cubed

2 garlic cloves, minced

2 mini bell peppers, red & orange, chopped (optional)

jalapeno pepper, minced

4 pieces turkey bacon, cooked and crumbled

3 cups chicken broth

 1 1/4 cups heavy cream

2 T flour

1 1/2 cups frozen corn

2 tsp southwest seasoning*

salt & pepper

1. Cut chicken into bite-sized pieces and toss with southwest seasonings. *This is just a combo of chili powder, chipotle powder, and paprika. Cook in EVOO in skillet heated over medium heat.

2. In soup pot place the chicken broth and the chopped carrots, onion, garlic, jalepeno, bell peppers and celery. Allow time to soften and simmer in broth before adding the chicken, corn and potato. Cook for at least 20 minutes.

3. Fry up your bacon, drain and crumble into the chowder pot. Season with thyme, salt and pepper. Taste.

4. Using a small whisk, combine the flour with the heavy cream in a bowl to make a roux. Add to the chowder and stir in well.

5. Let simmer another 20 minutes or more until potatoes are tender and all the flavors are combined.

I will share a few secrets with you: First, I used the crock pot, in stages, which made the chowder awesome. If you have the time I’d recommend this. Just follow the recipe with longer cooking intervals. After several hours the chicken is extremely tender and the overall flavor is amazing. Also, I used leftover chicken from my Chicken Enchilada Pasta Bake since there was so much leftover and I didn’t want to waste all that chicken or fantastic flavor. If you have any leftover dishes in your fridge, don’t be afraid to dig your hands into it and find a way to use it.

Mushroom & Peas Pulao

A pulao is an Indian rice pilaf. Honestly, this dish could be a meal in itself. It’s hearty and delicious; a perfect vegetarian dish.

Mushroom and Peas Pulao

2 cups brown or basmati rice, cooked

1/2 cup chicken or vegetable broth

8-10  oz. mushrooms, any kind (I used baby bella crimini)

1 cup fresh or frozen peas

small onion, diced

3-4 garlic cloves, sliced thin or minced

1 green chili, minced (I used jalapeno)1/4 tsp ginger

1/2 tsp cardamom (or 1/2 & 1/2 nutmeg-cinnamon)

1/4 tsp cloves

1/2 tsp chili powder, or to taste

juice from 1/2 a lime (about 1 T)

1/4 cup fresh cilantro, chopped

salt & pepper to taste

1. Cook your rice according to package directions. I always prefer to cook rice with chicken broth over water. It adds flavor and a little protein.

2. While the rice is cooking you can get the onions, garlic and jalapeno going in the skillet in 1 T of EVOO over medium heat. While that’s happening you can wash and cut your mushrooms into quarters, or smaller pieces if you prefer.

3. Time to get those spices in the skillet (ginger, cardamom, cloves & chili pepper). Make sure the heat isn’t too high. You want to release all those flavors without burning up your skillet. What you end up with is like a paste so put it your broth now and whisk.

4. Add the mushrooms and peas (if frozen. If fresh, wait until mushrooms are almost done). You’ll see quite a bit of moisture come out of them. Cook it all down slowly and combine everything well. 

5. Combine with cooked rice and stir in lime juice, fresh cilantro, and salt & pepper.

You may have noticed that I took a little sabbatical from blogging. I didn’t know I was going to take a break but it was obvious that I needed one. Baked Potato Slices

Have you ever tried to make Hasselback potatoes and ended up with a bunch of potato slices? No?? Hmm…. Must just be me then.

I am sure some day when I have a little more patience I’ll be successful at the Hasselback, but this time I wasn’t. What I was successful at, however, was taking all those slices and making them pretty tasty.

Baked Potato Slices

2 baking potatoes, sliced thin

1/4 cup butter, melted

salt & pepper

Similar to the poaching method I used for my Poached Salmon and Sour Cream Dill Dressing, I stacked those slices on their edges as if it were a whole potato, poured melted butter in between the slices, and salted & peppered it before wrapping everything up in a foil pillow.

Bake at 400* for about 45 minutes. Serve with love :)  And don’t forget to put some of that sour cream & dill dressing on the potatoes. Fabulous!

Asparagus Feta Tart

This was a yummy side dish for my Poached Salmon with Sour Cream Dill Dressing and a fun way to get the kids to eat their veggies. We are all feta fans here, me especially, but you could use just about any strong-flavored cheese you like. Feta doesn’t melt well, so if you think you might have a problem with your asparagus rolling off the tart, you may want to use Gruyere or Jarslberg or something else equally yummy.

Asparagus Feta Tart

1 sheet puff pastry, thawed

4 oz. feta cheese, crumbled fine

1 bunch asparagus*

Preheat oven to 400*. Unfold the pastry sheet and roll out to about a square foot in size. I roll it out over parchment paper so that I can easily transfer it to a baking sheet. Just flip it over and slowly peel the paper off.

Fork the dough all over so it won’t rise during baking. Bake for about 10 minutes or until very light brown.

While it’s baking prepare your asparagus. *I used rather fat ones because that’s what was available, which were fine, but thin ones crisp up so nicely in the oven. That would be my preference and recommendation. Cut off the ends and try to get all the stalks as even in size as possible. Toss with EVOO and salt & pepper. You could even throw a little minced garlic or garlic powder in there if you’re feeling frisky.

Remove the baking sheet from the oven and sprinkle the feta pieces evenly. Then top with the asparagus spears, arranging them by alternating tips and ends.

Bake for about 20 more minutes.

Poached Salmon with Sour Cream Dill Dressing

This poached salmon recipe has been sorely neglected. Once a staple in our house, it was replaced by the BBQ Salmon, and even more recently the Dijon Dill Salmon, and so I haven’t prepared salmon this way in years.

But this is good. Like really, really good. If you like salmon. And the dressing is heavenly. It makes everything better. In fact, this dressing is great on a variety of things including raw veggies and baked potatoes. It’s a thick dressing, but it melts easily and mixes in well with chunks of juicy veggies like tomatoes. But you absolutely have to try it on your salmon. Promise.

Poached Salmon

3 lb filet of salmon*

EVOO

2-3 stalks celery

1 medium onion, sliced

1 T capers

1 T lemon juice

2 T dill weed

salt & pepper

1. Preheat oven to 350* and cut a large piece of heavy-duty foil (about twice the size of your baking dish.

2. Wash and dry your salmon. *I use individual filets without skin and make one per person.

3. Wash your celery and cut into large chunks, including leaves. Slice onion. Arrange celery and onion on the bottom of the baking dish (on top of the center of the foil), leaving a few extra pieces for the top.

4. Place the salmon on top of the veggies (skin side down). Sprinkle liberally with EVOO over each piece (about 2 tsp each) then a bit of lemon juice and salt and pepper. *Fresh lemon slices are wonderful on this dish but if you don’t have any bottle lemon juice will work.

5. Sprinkle the dill and the capers over it all and then put any extra onions and celery pieces on top.

6. Fold the foil over and seal the top and the sides, creating a pillow. Bake for about 30 minutes. *Salmon will be tender and moist.

Sour Cream & Dill Dressing

2/3 cup mayonnaise

1/3 cup sour cream

1 tsp dill weed

2 T minced onion

1/4 tsp garlic powder

1 T lemon juice

1/4 tsp white pepper

1. Combine everything and taste. Add salt & pepper as needed.

2. Refrigerate at least an hour. Makes 1 cup.
