Around here a sweet now and then is a must, and since we are currently gluten free I needed even more yummy snacks around, particularly for school lunches instead of our standard Trader Joe’s Jo-Jo’s.
These cookies will definitely hit the spot any time of the day, and what’s even better is that they are gluten free so you don’t have to feel guilty for indulging.
Gluten Free Chocolate Chip Cookies
2 cups GF all-purpose baking mix
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup butter
1/2 cup organic sugar
1/2 cup brown sugar, packed
1 egg
1 tsp vanilla
1 cup semi-sweet chocolate chips
Preheat oven to 375*. Blend baking mix, baking powder, baking soda, and salt; set aside.
In large bowl mix butter, sugars, egg and vanilla. Add dry ingredients; blend until well combined.
Mix in chocoltae chips. Drop rounded teaspoons 2 inches apart onto ungreased or parchment paper-lined baking sheet.
Bake for 8-10 minutes. Cool slightly before removing from sheet onto wire rack.
Yield: 4 dozen cookies
